After pruning, plowing, and de-budding, there is still a lot of work to be done in the vines. Keeping true to our organic ways until it's time for harvest.
We harvest by hand and select only the best grapes for our Châteauneuf du Pape. We do not de stem, the grapes go directly into cement vats for three weeks to start fermentation. We then press them and finish the fermentation in big oak barrels. The wine is then assembled and aged for 18 months in different types of barrels.
One of our objectives is to respect tradition, so we continue to plow our fields, and don't use any phytosanitary products or pesticides. The sun and mistral (north wind) are our biggest allies to achieve maximum quality and maturity.

We strive to work with the utmost seriousness, surpassing ourselves every day. Because the future of our wines must remain seen in the quality and the respect for nature.
